Pumpkin Spice Granola Bars with OlovesM Flair

Ingredients (makes about 12 bars):

  • 2 cups rolled oats (quick oats work well)
  • 1 cup chopped nuts (almonds, pecans, walnuts, or a combination)
  • 1/2 cup dried cranberries or chopped dried cherries
  • 1/4 cup pumpkin seeds
  • 1/4 cup chia seeds (optional)
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, combine oats, nuts, dried fruit, pumpkin seeds, and chia seeds (if using).
  3. In a separate bowl, whisk together honey or maple syrup, melted coconut oil, pumpkin pie spice, and salt.
  4. Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
  5. Press the mixture firmly into the prepared baking pan.
  6. Bake for 20-25 minutes, or until golden brown.
  7. Let cool completely before cutting into bars.
