Ingredients (makes about 12 bars):
- 2 cups rolled oats (quick oats work well)
- 1 cup chopped nuts (almonds, pecans, walnuts, or a combination)
- 1/2 cup dried cranberries or chopped dried cherries
- 1/4 cup pumpkin seeds
- 1/4 cup chia seeds (optional)
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
Instructions:
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
- In a large bowl, combine oats, nuts, dried fruit, pumpkin seeds, and chia seeds (if using).
- In a separate bowl, whisk together honey or maple syrup, melted coconut oil, pumpkin pie spice, and salt.
- Pour the wet ingredients over the dry ingredients and mix well until everything is evenly coated.
- Press the mixture firmly into the prepared baking pan.
- Bake for 20-25 minutes, or until golden brown.
- Let cool completely before cutting into bars.
